Healthy, Yummy, and Easy homemade popsicles for kids. Cake batter cookies

I'm very proud to link up (again) with 4th Grade Frolics for Made it Monday.

I've had a very busy week. I've uploaded 3 brand new products...baked and baked some more...and got a little crafty!

I got the idea off of pinterest

Ingredients:

  • 1 box (18.25 oz) vanilla/white cake mix
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/3 cup vegetable/canola oil
  • 1/2 teaspoon vanilla extract

Directions:

Preheat oven to 350F. Line large baking sheet with parchment paper. Set aside.
In a large bowl, mix together the cake mix and baking powder. Set aside. In a smaller bowl, whisk together the eggs, oil, and vanilla by hand. Add the egg mixture to the cake mixture and stir to form a dough.
Drop rounded 1-inch balls of dough onto prepared baking sheet. Bake for 9 minutes - do not let the cookies get brown. Allow to cool on baking sheet for 3 minutes; they will be very soft at first.

My almost 2 year old HATES to eat. Hates it. There is only one thing that she wants. POP...that's Popsicle for short. From the moment she wakes up, "Pop, please". Ugh, how do I say no? She literally eats 5 a day. I had to start making them healthy. I couldn't let my sweet girl eat all those sweet popsicles.

I looked at Pinterest. I didn't have any of the ingredients they were talking about. I decided just to make a smoothie and freeze it.

My daughter LOVES them. I mean LOVES them. I don't like them so much. It needs some sugar. However, I'm staying away from sugar. But as long as my baby loves them, I'm going to keep it the same.

Here is what I put in it:

Kale
Strawberries
Blueberries
Peaches
Carrots
Lime Juice
Water

Blend it all up. and freeze for 4-6 hours.

Another teacher was throwing away the above white bins. There was about 20 of them. One person's trash is MY treasure. I scooped them up. Then, I added some spray paint, glued on glitter duct tape (I had from an old project), and embellished with the chalkboard label (again, I already had it from an old project). Now they look fabulous!

I'm going to use them as a group work turn in station.
Any other ideas on how to use them? Leave comments below.

  6. Love the bins! You could use them as activity bins to store large centers or games. I love finding "garbage" and making it work for me. Fabulous find!
